Kalai Dal is dal made of split white Urad Dal. Bori or sundried lentil drops is not only a Bengali specialty but it also adds to every dish the much needed texture and taste. The Kalai Bori is first made into a fine paste and then sun-dried in little pearl shapes. Once dried, the Kalai Bori can be had simply by frying the bori and having it as a crunchy side dish or by putting it into a curry. This unique Bengali specialty will soon become a favourite in the kitchen owing to its richness in texture and flavour.
